I was with Josh at the store one day and he saw this “Veggetti” thing and said “that seems right up your alley”. I was hesitating because it was $29.99 at the store. Despite my hesitation I bought it. He was right, it was “so me”. Turns out, it was one of the best kitchen investments I’ve made. With this little device I have completely given up pasta and rely solely on the Veggetti to make all my “noodles”. I mainly use Zucchini for making pasta, as it has the perfect texture and makes the perfect noodle.
Sadly, I found the Veggetti on amazon for only $14.99 (so I feel a little down I paid so much at the store). It’s okay because when I need a replacement I know where to go.
Zucchini Noodles Recipe
- Half an Avocado
- A couple Cherry Tomatoes (or grape tomatoes)
- Salt & Pepper
- Coconut Oil
Melt your oil into a pan (do not heat on high, simply melt). Use your Veggetti to make the noodles out of your zucchini. Mix the warm oil with your noodles. This works best if the zucchini is room temperate to start with. Mash your avocado into a bowl (this will be your ‘sauce’). Cut some of your tomatoes in half. Mix everything together and add salt and pepper on top. That’s it! So easy and simple, and yet so delicious. I feel really great about myself and my body once eating this.
